Homemade ice cream

This is an ice cream recipe from Icebabe. I made it last weekend and its really good. shes right, I'll almost never eat store bought stuff again after this. Caster sugar = a fine ground sugar, in between regular and powdered. you could sub the passionfruit pulp for something else. raspberries?? strawberries? choc drops?

3 eggs, separated
half cup caster sugar
1 t of vanilla essence
300mls cream (whipped)
half cup of passionfruit pulp (Tasti brand is what I use)

Beat egg whites until stiff peak stage

In separate bowl beat egg yolks until pale (4-5 mins), then gradually add sugar (while still beating) until thick and pale (sounds like me). Beat in vanilla essence

Gently fold in the egg whites into yolk mixture then fold in the cream and passionfruit. Spoon into freezer proof container (makes about 2L) then freeze until set. No need for re-whipping mid way through freezing.

Peanut Butter Cookies with white choc and macadamias

1 C Peanut butter (crunchy or smooth, natural is best)
1 C Caster or lightly packed Brown sugar
1 whole egg lightly beaten
1 block white cooking chocolate broken into chunks. (or use bits/morsels)
approx 1/2 cup macadamias - lightly roasted, no salt, roughly smashed to chunky pieces

Place peanut butter, sugar and egg into a mixing bowl. Stir with a wooden spoon until mixture thickens and is no longer sticky. Stir in choc chunks and nuts.

divide into as many cookies as you want - (I get about 15 good sized ones out of this), place balls on cookie sheet and flatten lightly with fingertips. Bake at 180 degreesC for approx 12 mins.

Eat.

Flourless Chocolate Cake

This is the shit. I made it a few weeks ago and had it warm with vanilla ice cream and fresh strawberries for dessert - i did not use the topping suggested. sooo good. good for a 'free' meal.

Ingredients:

125g unsalted butter
185g dark chocolate roughly chopped
5 large eggs, separated
pinch of salt
230g caster sugar
250g ground almonds (almond meal)

To Decorate:

300g dark chocolate, melted
1 punnet fresh raspberries
icing (confectioners) sugar

Method:

Preheat oven to 180C.

In a medium heat proof bowl over simmer water stir butter, chocolate till melted together. Set aside to cool

Beat egg whites with salt and 1/3 of sugar until soft peaks form. Beat egg yolks with the remaining sugar until creamy. Fold yolks into chocolate then the almond meal. Then fold egg whites in.

Spray and line with baking paper a spring-form pan. Pour mixture into pan and bake for 45-55 minutes or until cake is firm in the middle. Cool on a wire rack.

Meanwhile cut a circle of baking paper 6cm wider than the diameter of the cake. Spread thickly the melted chocolate and set aside to harden slightly - for 5 mins. place on top of cooked cake and allow sides to fold down over the cake loosely. Refrigerate until set. Sprinkle with raspberries and icing sugar.
